A Lobster Dinner

A Lobster for Dinner


Ingredients

  • 3 ounces cooked Lobster Tail Meat, chopped finely
  • ¼ cup Shallots, minced
  • 10 Wonton Wrappers
  • 1 tablespoon Unsalted Butter
  • ¼ cup Light Cream
  • 3 tablespoons 1% Milk
  • 2/3 cup of 1 can Cream style Corn
  • 3 tablespoons Fresh Chives, chopped
  • 1/8 teaspoon Black Pepper

Directions

  1. In a small saucepan, melt butter over medium heat. Saute shallots until they become tender.
  2. In a separate bowl, mix half of the sautéed shallots and the lobster meat. Keep the remaining shallots in the pan. Set aside.
  3. Spoon 2 teaspoons lobster mixture onto the middle of each wonton wrapper. Moisten the edges using water. Bring the 2 opposite corners and seal with a fork once it has formed a triangle.
  4. Boil water in a large saucepan. Let simmer before adding the ravioli. Cook for 2-3 minutes. Using a slotted spoon, remove the ravioli. Keep them warm.
  5. Blend corn and milk in a blender until they become smooth. Add the mixture to the shallots in the saucepan. Mix in the pepper and light cream. Over medium heat, cook the mixture until they have been heated thoroughly. Add the chives.
  6. Divide the ravioli evenly among 2 bowls. Spoon the sauce over the ravioli.
  7. A lobster dinner recipe ready to be served immediately.
