Crawfish is especially favored in places such as Southern Louisiana. In fact, the locals regularly look forward to the arrival of Spring since this is the time when crawfish season occurs. As a result, they hold several occasions to serve the local Cajun delicacy to their friends and family members.
Although crawfish comes in several names (crayfish, mudbugs, or crawdads), they are still being enjoyed in the Continental part of the United States. If you want to join in on the fun of this tradition, you can have your very own serving of Louisiana Crawfish boil in your home. Here is a good way you can cook crawfish:
Boiling Crawfish
- Thoroughly rinse each crawfish under running cold water until there are no more superficial debris. Using a large bucket full of water, pour in the crawfish. Let them stand for 30 minutes.
- Cut 2 lemons and 2 oranges into rounds with their rinds still attached. Fill up a stockpot with water. Add the cut fruits into it along with chili powder, cayenne, bay leaves, salt, black pepper, and garlic.
- Bring water to a boil over high heat. Cook crawfish for 10-15 minutes.
- Add in the onions, corn and potatoes onto the stockpot. When the water starts boiling again, let it cook for 5 additional minutes.
- Drain water from crawfish. Pour them onto a stockpot. Again, wait until water starts boiling before starting its cooking time to 10-12 minutes. Remove stockpot from heat and cover.
If the crawfish has been raised in a farm and have been purged already, there is no need to soak them in water for 30 minutes.
The best time for buying live crawfish is during early November until the later part of June.
Eating Crawfish
When you are eating crawfish, make sure you are wearing a special bib to protect your clothing. This is particularly recommended when wearing anything white. The reason for this is so you can be given free reign with your movement.
While holding the crawfish with one hand, gently twist off its tail. Take off its head. There are a lot of people who suck this part since there are a lot of flavor from the juices that can be found in this part. If you don’t find this appealing, squeeze your forefinger and thumb at the sides of tail’s tip. This will cause the crawfish’s shell to break. Remove its meat and eat. Enjoy.
