There are a lot of lobster recipes available in the world. But if you are looking for a good dish to prepare for you and your friends, you can follow a stuffed lobster recipe that will let you have a good taste and is much more easy to eat than many lobster dishes.

Stuffed Lobster
Ingredients
- 1 ½ lbs. Lobsters, thawed
- 2 cups Butter cracker crumbs
- ¼ cup Shallots, chopped
- 2 tablespoons Celery, finely chopped
- 1 tablespoon Yellow Bell Peppers, finely chopped
- 1 tablespoon Red Bell Peppers, finely chopped
- 1 stick Unsalted Butter, melted (for stuffing)
- 1 tablespoon Unsalted Butter
- 1 teaspoon Garlic, minced
- 1 tablespoon Fresh Lemon Juice
- 2 teaspoons Tarragon, minced
- 1 tablespoon Parsley, minced
- ½ teaspoon Salt
- 1 teaspoon Essence
Garnish
- Lemon Wedges
- Watercress
Directions
- Preheat oven to 375°F.
- Fill large stockpot with ¾ full of salted water. Bring to boil. Plunge lobsters headfirst onto the boiling water. Cook covered until they are firm and cooked through, around 6-7 minutes. Using tongs, drain and transfer to large bowl full of ice water.
- Once lobsters are cooled, place them flat on their back. Using heavy scissors, cut every lobster in the middle, from its head to the tail. Avoid cutting through its hard shell.
- Lift the roe (pink coral) and the liver (green tomalley) out. Get rid of the stomach sac from its head’s back and the black vein which runs through its head to tail. Leaving the claws intact, remove meat from tail. Chop meat coarsely, set aside. Place shells on large baking sheet.
- In a separate skillet, melt 1 tablespoon butter over medium-high heat. Saute shallots, bell peppers and celery. Cook and stir for 2 minutes. Add garlic, cook for 30 seconds. Cook chopped lobster meat, stirring for a couple of minutes. Remove from heat.
- In large bowl, mix chopped lobster meat, the reserved roe and tomalley, cracker crumbs, sautéed vegetables, lemon juice, tarragon, parsley, salt, and Essence. Stir, adding enough melted butter to come up with a paste like consistency. Fill each lobster cavity with the mixture before placing them on baking sheet.
- Bake until mixture has heated through, for around 15 minutes. Increase its heat, broil until it turns golden brown and cracker crumbs turn crisp, 2-3 minutes. Remove from oven.
- Line plate with the watercress. Place stuffed lobster recipe on each plate, garnishing with lemon.
